Meal Plan Monday: two weeks in a row #fistbump

 

Nothing says Happy Birthday ‘merica like margs and guac right? We had a fantastic day by the pool with friends and family sipping my sweet friend Cassie’s world famous margs …they seriously deserve their own post…and my husband’s AMAZING smoked brisket. Mathew Good puts the lock down on his smoked goods. His brisket is legit. And if you’ve never tried it – here’s hoping it’s delicacy will grace your taste buds some day soon. We stuffed our bellies and headed out to shoot some non-HOA approved, probably-not-so-legal, fireworks in our cul du sac

[If you’re a member of the Tulsa County PD…please just stop reading right here..because I am SURE a ton of policeman read this blog.] These fireworks were INTENSE. Our little girls screamed… well, like little girls. And their daddies were in pyro-heaven. It was a win-win for us mommas because they thought they WERE the REAL fireworks so we were off the hook for keeping our sugar-infused crazies up any longer.

As fab as the 4th is… basking in the sun, laughing with friends, sipping margs… lets talk about the not so famous 5th of July. Ouch. My sleep deprived, popsicle/cupcake/cobbler/ice cream fueled kids were INTENSE. We herded them off to church and prayed the sermon would run long. It was a LONG day … followed by an EARLY bedtime. Does it get easier friends? Please tell me how you can keep your kids up late to see the realĀ  fireworks and survive the next day? I apparently needed a few more of Cassie’s margs.

On to the menu plan…And if you only try one thing off this week’s menu, it should definitely be the Rosemary Salmon. Pair it with some fresh green beans or brussle sprouts. YUM.

Monday: leftovers {ptl for extra smoked brisket}

Tuesday: Rosemary Salmon

Wednesday: black bean tacos

Thursday: Lemon chicken & potatoes

Friday: zuchinni shrimp scampiĀ
