Meal Plan Monday

Are you kidding me with this heat?? Oklahoma in July/Aug is no joke. I headed out for my run this morning and made the mistake of looking at my weather app. Why? Who knows. 96% HUMIDITY?! I might as well go run in the rainforest. I seriously thought about just feeding my family ice-cream every night for dinner. Would it really be THAT bad for them??!

Okay friends… may your Monday go easy on you, your coffee be extra strong… and your AC be on full blast all day. And if you do feed your kids ice cream for dinner I will be the last person on earth to judge!


Monday: Salmon Burgers (we love the spinach and feta ones from the butcher at WF… we skip the bun and top with avocado slices and heirloom tomatoes… and more feta because feta is straight from God)

Tuesday: Chicken Orzo salad with goat cheese

Wednesday: Mediterranean Roasted Chicken; couscous

Thursday: leftover MRC in whole wheat pitas with a little hummus

Fri/Sat: Calzone: nothing crazy… I buy the pre made whole wheat dough from WF…because it’s amazing…AND ALREADY MADE… top with sauce, turkey pepperoni, cheese,  some veggies & fold in half. I’m sure there are 100 better ways to do this, but this is fast and my family thinks its amazing. Double win.

Meal Plan Monday: back in the saddle

After a very crazy week that included my mom’s surgery, family in town, a “quick” first-time-with-all-three-kids road trip to Colorado, (this deserves a blog in and of itself. all I can say is thank goodness we all survived. and still love each other. kind of) a 20th high school reunion (Mat’s… not mine. He robbed the cradle over here) we are BACK and I told my kids it was nothing but veggies this week after all the crap we bribed them with on the road trip. There may or may not even have been McGriddles involved (insert embarrassed emoji face) SURVIVAL PEOPLE.


It’s nothing fancy or mind blowing – just easy quick stuff that doesn’t involve an oven on for too long. Holy Smokes its going to be a hot one this week!


MONDAY: stuffed peppers. Meatless and a favorite pepper recipe over here..No link but toss quinoa, grape tomatoes, garlic, yellow onion, basil together and stuff the peppers… top with chunks of fresh mozzarella and bake at 400 until bubbly)

TUESDAY: grilled chicken & roasted okra

WEDNESDAY: leftover grilled chicken and cabbage salad. New recipe that a friend pinned this weekend… the dressing sounds delish.

THURSDAY: Salmon & roasted brussel sprouts (toss with EVOO, S&P, and garlic, roast at 400 for 15-20 minutes, sprinkle with parm and fresh lemon juice)

FRIDAY: date night

SATURDAY: Chicken Avocado bacon wraps

Meal Plan Monday: two weeks in a row #fistbump


Nothing says Happy Birthday ‘merica like margs and guac right? We had a fantastic day by the pool with friends and family sipping my sweet friend Cassie’s world famous margs …they seriously deserve their own post…and my husband’s AMAZING smoked brisket. Mathew Good puts the lock down on his smoked goods. His brisket is legit. And if you’ve never tried it – here’s hoping it’s delicacy will grace your taste buds some day soon. We stuffed our bellies and headed out to shoot some non-HOA approved, probably-not-so-legal, fireworks in our cul du sac

[If you’re a member of the Tulsa County PD…please just stop reading right here..because I am SURE a ton of policeman read this blog.] These fireworks were INTENSE. Our little girls screamed… well, like little girls. And their daddies were in pyro-heaven. It was a win-win for us mommas because they thought they WERE the REAL fireworks so we were off the hook for keeping our sugar-infused crazies up any longer.

As fab as the 4th is… basking in the sun, laughing with friends, sipping margs… lets talk about the not so famous 5th of July. Ouch. My sleep deprived, popsicle/cupcake/cobbler/ice cream fueled kids were INTENSE. We herded them off to church and prayed the sermon would run long. It was a LONG day … followed by an EARLY bedtime. Does it get easier friends? Please tell me how you can keep your kids up late to see the real  fireworks and survive the next day? I apparently needed a few more of Cassie’s margs.

On to the menu plan…And if you only try one thing off this week’s menu, it should definitely be the Rosemary Salmon. Pair it with some fresh green beans or brussle sprouts. YUM.

Good Eats: Back at it

Man I miss blogging. Two posts in 11 months? Shame. The past few weeks I’ve been instagramming our meal plan and I’ve had some people ask for the links to recipes. I tell myself I’m too busy to blog…but come on… I can do this in 5 minutes. Right? {side note… the whole 5 minutes I was typing this, Syd was playing sweetly and singing Happy Birthday to herself. Sweet precious angel child. After I finished and checked in on her she had actually been water painting and added a mashed banana to the cup of water and then smeared paint all over herself and the floor. Awesome.}

If you’re new to our weekly menu’s…And seriously – they’re nothing fancy or mind blowing – but I know how I get stuck on menu ideas, so if I can help you out just a tad – just one mom helping out another..then you’re welcome.) I love to cook. Seriously love it. But the reality of three kids at mealtime is not typically a calm, quiet experience while listening to my Amos Lee Pandora station and sipping a glass of Merlot. In fact it’s no where close. Usually, there is a wild chase to keep Jack out of the dog bowls or toilet… some child needing a break in time out….another who decides it’s a great time to go in the pantry and eat snacks. You get the picture. And someone…anyone… is crying the entire time.  So time is of the essence. Most of my meals linked will be ready in under 30… or something I can quickly prep during their nap/rest time and throw together a few minutes before we eat. Also … we try to eat as cleanly as possible in our house. I would LIKE to say we eat 80/20…but here lately I feel like it’s more like 70/30. Or worse. Oops. Darn you summer. But I am serious about getting rid of as much processed crap as possible. So quick, healthy and delicious. And kid friendly. Because this momma makes one meal a night. For everyone. {You don’t like it? Bummer. Feel free to wait for breakfast.}

These are main dishes. We try to always have some sort of whole grain and a fruit/veggie with our meal.

Also. no laughing at my lack of chalk board skills. They’re bad. Real bad.

Here’s to hoping that I will actually get back to blogging again!

Monday: BBQ chicken wraps {leftover grilled chicken, smoked gouda, granny smith apples and red onions. Yum. Also… trying this mixture from Gracious Pantry for a clean bbq sauce

Tuesday: Shrimp Tacos {double the recipe & subbing greek yogurt for the sour cream}

Wednesday: Greek chicken salad pitas {loosely based off of this recipe with whole wheat pitas}

Thursday: Caprese sandwich {no link… whole wheat sour dough bread, fresh mozzarella, heirloom tomatoes, basil & pesto. Toasted.}

1. Yessssss! Love when you blog.
2. Caprese Sammies are a Hash staple! I’m sure you do this, but if you grill the inside of the bread before assembling the sandwich it keeps the pesto and tomato from making the bread soggy.
